The Windsong Cooler


  • 6 Cucumber chunks
  • 15ml Sugar syrup
  • 10 Mint leaves
  • 45ml Windsong white rum
  • 20ml Elderflower liqueur
  • 15ml Lime juice
  • 50ml Cloudy apple juice
  • Cucumber ribbon, blackberries and edible purple flowers to garnish


  • Add the cucumber chunks to a cocktail shaker and muddle with the sugar syrup.
  • Add the mint leaves and gently press before adding the Windsong white rum, elderflower liqueur, lime juice, and cloudy apple juice.
  • Shake and fine strain into the fanciest glass you can find.
  • Garnish with cucumber ribbon, blackberries and edible purple flowers.
