Mermaid’s Song Mojito
- 4 Chunks of Pineapple
- 25ml Demerara Syrup
- 25ml Lime juice
- 8 Mint leaves
- 50ml Windsong white rum
- Ginger Beer
- Pineapple wedge and sprig of mint to garnish
- Add the chunks of pineapple to a tumbler along with the demerara syrup and lime juice, and muddle.
- Add the mint leaves and gently press before adding the Windsong white rum.
- Stir with ice and pull ingredients to the top of the glass.
- Top with ginger beer and garnish with a pineapple wedge and sprig of mint leaves.
